Istrian ham Jelenić
Istrian ham Jelenić is a cured meat, made of pork leg, in Istrian style, dry cured with sea salt and natural spices and dried in the ‘bura’ without fire smoke. Respecting the traditions and the production technology, Istrian ham Jelenić is an authentic Croatian product and a superb delicacy that has its distinctive aroma, moderately salty flavor and a red color that represents a healthy and mouthwatering product. This exceptional delicacy is among the healthiest of the kind on the Mediterranean, so it is legally protected and registered as an original Croatian product.
Istrian loin - Ombolo
Istrian loin, pork loin or ‘žlomprt’ are names used in some parts of Istria to denote a part of pork chop. The meat is separated from the bone, then salt, pepper and finely crumbled leaves of laurel are rubbed in. The meat is then left to dry for two or three weeks. It can be served in different ways; cut into slices, grilled or fried in a pan with olive oil.
Istrian belly - Panceta
Istrian belly, the pig’s belly is treated as flat, after that a mixture of sea salt, pepper and crumbled leaves of laurel are rubbed in. After the salting period, the product is placed to dry in a cool, dry room for about 90 days. It is perfect to serve with the Istrian ham.
